- 1 Tbs. minced fresh ginger
- 2 Tbs. hoisin sauce
- 3 Tbs. rice-wine vinegar
- 1 tsp. soy sauce
- Salt
- 4 Tbs. oil
- 1 lb. ground turkey
- 1 tomato, about 1/2 lb.
- 8 leaves Boston lettuce
- 4 tsp. toasted sesame seeds
Directions
Mince garlic. Chop white part of the scallion and slice the green top. Combine garlic, white part of the scallion and the ginger. Combine hoisin sauce, 2 Tbs. vinegar, soy sauce and 1/4 tsp. salt. In a large frying pan, heat 1 Tbs. oil over medium heat. Add garlic mixture and cook, stirring, until mixture starts to brown, about 30 seconds. Crumble in turkey and cook, stirring, until cooked through. Stir in hoisin-sauce mixture and cook 1 minute. Put meat mixture in a bowl and cool to room temperature. Cut tomato into 1/2" dice. In a small jar, combine remaining 1 Tbs. vinegar and 1/2 tsp. salt and shake until salt dissolves. Add remaining 3 Tbs. oil and shake again to combine. To serve: Fill a lettuce leaf with some of the turkey mixture, top with tomatoes, scallion greens and sesame seeds, and pour some of the dressing over all.
