Ingredients
COOKIES:
- 2¼ cups flour
- ½ tsp. baking powder
- ½ tsp. salt
- 12 Tbs. unsalted butter, at room temperature
- ¾ cup sugar
- 1 egg
- ½ tsp. vanilla
DECORATIONS:
- 2½ cups confectioners’ sugar
- ¼ tsp. cream of tartar
- 2 egg whites
- Green and red food coloring
Directions
- Combine flour, baking powder and salt.
- In a large bowl using an electric mixer, beat butter and sugar until creamy. Beat in egg and vanilla until light and fluffy. On low speed, gradually beat in flour mixture. Chill until firm enough to roll, about 2 hours.
- Heat oven to 350°. Roll dough to ⅛" thick. Cut out with 2½" to 3" cookie cutters. Bake on ungreased baking sheets until edges are golden, 8 to 10 minutes. Cool on wire racks.
- Meanwhile, sift confectioners’ sugar and cream of tartar into small bowl. Add egg whites. With an electric mixer set at high speed, beat until so stiff that a knife drawn through center of bowl leaves a clean path. Divide in three and tint ⅓ green and ⅓ red. Decorate cookies as desired.
