Ingredients

  • 2 tomatoes, about 1 lb.
  • Salt and pepper
  • 1 cup flour
  • 3 eggs
  • 1 cup cornmeal
  • Oil for frying
  • 1 lb. okra
  • 1 jalapeño pepper, minced
  • 2 Tbs. chopped onion

Directions

Heat oven to 200°. Cut tomatoes in half and remove seeds. Chop tomatoes. In a small bowl, combine the chopped tomatoes with 1/4 tsp. salt and let stand. Combine flour, 1 tsp. salt and 1/4 tsp. pepper. Beat eggs. Put cornmeal in a bowl. In a heavy frying pan, heat 1/2″ oil over medium-high heat. Coat okra in flour mixture. Dip into beaten eggs and then coat with cornmeal. Fry okra in the hot oil until golden, 3 to 5 minutes. Drain on paper towels. Keep warm in the oven while continuing to fry remaining okra. Drain the tomatoes and stir in the jalapeño and onion. Serve the salsa with the okra.
