Spinach Rolls

Some recipes in My Mom’s Recipe Box were handwritten, while others were carefully typed and filed away for future use. This Spinach Rolls recipe is one of those typewritten cards. Rather than rewriting or modernizing it, this post preserves the original recipe and the way it was kept in my mother’s collection.

Original Recipe Card

Spinach Rolls

Ingredients

  • 2 boxes chopped spinach (thaw and drain real good)
  • 6 small green onions, chopped fine
  • 1 c. sour cream
  • 1. c. mayonnaise
  • ½ c. bacon bits
  • 1 pkg. Ranch Dressing Mix
  • Dash of lemon juice
  • 1 pkg. soft flour tortillas (med. size)

Directions

Mix all ingredients together. Let set for at least 20 mins. Spread on flour tortilla (not too thick), then roll and place on cookie sheet. Let set overnight then cut into small rolls.

Preservation Notes

Unlike many handwritten recipes in My Mom’s Recipe Box, this recipe was typed on a typewriter. The original typewritten card has been preserved exactly as scanned, reflecting another way recipes were collected and organized before home computers became common.
